French cuisine is the world's most prestigious and respected culinary art. André Pachon, owner/chef of Restaurant PACHON and other restaurants, paved the way for thousands of French restaurants, from traditional to nouveau, to proliferate in the Japanese food industry. André started his apprenticeship at age 15 and devoted his life to serving traditional French dishes. Restaurant PACHON is a family business—his sons Patric and Thierry work alongside him. They are preserving the legacy of French cuisine and have gained the ardent patronage of many, including members of the Imperial family and Prime Ministers. André has merited several awards, notably the Legion of Honor from France and for cultural promotion from the Ministry of Culture.
