André started his apprenticeship at age 15 and devoted his life to serving traditional French dishes. Restaurant PACHON is a family business—his sons Patric and Thierry work alongside him. André has merited several awards, notably the Legion of Honor from France and for cultural promotion from the Ministry of Culture.
